Instructions

  1. Prepare the Pan: Line an 8-inch square baking pan with foil, leaving some overhang on the sides. Grease the foil with 1-1/2 teaspoons of softened butter and set aside while preparing the fudge.
  2. Cook the Sugar Mixture: In a large, heavy-bottomed saucepan, combine the sugar, sour cream, and remaining 1/4 cup butter. Stir frequently over medium heat until the sugar dissolves. Bring to a rapid boil and cook for about 5 minutes, or until a candy thermometer reads 234°F (soft-ball stage). You can test by dropping a small spoonful in cold water to check for a soft, pliable ball.
  3. Add Chocolate and Flavorings: Remove the pan from heat. Quickly stir in the chopped white chocolate, marshmallow cream, and peppermint extract until smooth and fully melted.
  4. Layer and Color the Fudge: Pour half of the fudge mixture into the prepared pan. Add 5 drops of green food coloring to the remaining fudge mixture in the saucepan. Spoon this green mixture over the white layer, then use a knife to swirl the two layers together creating a marbled effect.
  5. Add Sprinkles and Chill: Sprinkle the heart sprinkles evenly over the top. Refrigerate the fudge until firm, at least 2 hours.
  6. Cut and Serve: Once set, lift the fudge from the pan using the foil overhang. Peel away the foil and slice into 1-inch squares with a sharp knife. Serve immediately or store refrigerated.
