  • 2 tablespoons hummus
  • 2 ounces deli turkey

Vegetable and Salad Mix

  • 1 leaf lettuce (romaine works well)
  • 3-4 slices cucumber
  • 3-4 cherry tomatoes
  • 5-6 strips red onion
  • 3-4 kalamata olives
  • 3-4 banana pepper rings (mild)
  • 2 tablespoons feta cheese crumbles
  • 1.5 tablespoons Greek vinaigrette


Instructions

  1. Prepare lettuce: Chop the romaine lettuce leaf into thin shreds or use pre-packaged shredded lettuce.
  2. Prepare tomatoes: Quarter the cherry tomatoes into small pieces.
  3. Prepare cucumber: Thinly slice the cucumber, then cut each slice into quarters to create small triangular shapes.
  4. Slice onion: Slice the red onion into thin strips.
  5. Slice olives: Slice 3-4 kalamata olives into smaller pieces.
  6. Chop banana peppers: Chop 3-4 banana pepper rings into smaller pieces.
  7. Toss salad mix: In a small bowl, combine all the chopped veggies, olives, and banana peppers. Add 2 tablespoons of feta cheese crumbles and drizzle with 1.5 tablespoons Greek vinaigrette. Toss to combine and set aside.
  8. Prepare tortilla: Lay the tortilla flat and spread 2 tablespoons of hummus evenly over it.
  9. Layer turkey: Place 2 ounces of deli turkey on top of the hummus, keeping it centered for easier rolling.
  10. Add salad mix: Evenly scoop the salad mixture over the turkey, keeping it centered on the tortilla.
