Instructions
- Prepare the base: In a large pot over medium heat, melt the butter. Add the finely chopped onion and cook for about 3–4 minutes until the onion becomes soft and translucent.
- Sauté the mushrooms: Add the sliced mushrooms to the pot and sauté for 7–8 minutes, stirring occasionally until they release their moisture and turn golden brown.
- Add flour and paprika: Sprinkle the flour and Hungarian paprika over the mushrooms. Stir well to coat the mushrooms evenly and cook for another 1–2 minutes to eliminate the raw flour taste.
- Add liquids and simmer: Gradually pour in the chicken broth while stirring constantly to avoid lumps. Add the milk and Tamari sauce, stir well, and bring the mixture to a gentle simmer. Let it cook for 10 minutes, stirring occasionally.
- Finish the soup: Remove the pot from heat. Stir in the sour cream, lemon juice, fresh parsley, fresh dill, fresh thyme, salt, black pepper, and ground chili pepper until the soup is smooth and well combined.
- Serve: Let the soup rest for a couple of minutes before serving. Garnish with extra fresh herbs if desired and serve alongside crusty bread or a light salad.
