Ingredients
Scale
Main Ingredients
- 2 pounds ground beef
- 1 small onion (finely diced, about 1 cup diced)
- 4 garlic cloves (minced)
- 2 large eggs
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- ⅔ cup quick-cooking oats
- ⅓ cup milk
- 2 tablespoons finely chopped fresh parsley
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
Glaze
- ½ cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon coconut sugar or brown sugar
Instructions
- Combine Ingredients: In a large mixing bowl, add the ground beef, finely diced onion, minced garlic, eggs, ketchup, Worcestershire sauce, oats, milk, chopped parsley, Italian seasoning, kosher salt, and ground black pepper. Use your hands to mix the ingredients together gently until well combined, avoiding over-mixing to keep the meatloaf tender.
- Form a Loaf: On a casserole pan or rimmed baking sheet, shape the meat mixture into a loaf approximately 9x5 inches. Alternatively, you can press the mixture evenly into a loaf pan.
- Coat with the Glaze: In a small bowl, stir together ketchup, Worcestershire sauce, and coconut or brown sugar to create the glaze. Brush this mixture evenly over the top of the formed meatloaf.
- Cook: Preheat the oven to 350°F (175°C). Place the meatloaf in the oven and bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (70°C).
- Slice and Serve: Remove the meatloaf from the oven and allow it to rest for 10 minutes to let the juices redistribute. Slice and serve warm.
Notes
- To keep the meatloaf moist, avoid over-mixing the ingredients, as this can make it dense.
- The quick-cooking oats act as a binder and add texture without gluten.
- Letting the meatloaf rest after baking allows it to slice more cleanly and retain juices.
- You can substitute ground beef with a mixture of beef and pork for added flavor.
- For a rustic shape, form the loaf by hand; for a neater appearance, use a loaf pan.
- If you don't have Worcestershire sauce, soy sauce can be used as a substitute, though the flavor will differ slightly.
